Nothin’ says LOVE like… Meatloaf!

Growing up, every Valentine’s Day my SuperMom would make her famous heart-shaped meatloaf, glazed with bright red ketchup and surrounded by fluffy mashed potato ruffles. It was that kind of quirky, once a year treat that you look forward to as a kid, make fun of as a teenager, and only learn to really appreciate once you’re all on your own.

But the best part about My Mom’s Meatloaf — it is soooooo tasty. So with Valentine’s Day coming up on Monday, of course I started dreaming of ways to share the deliciousness with all our Bacon people. What we’ve come up with is My Mom’s Meatloaf Slider, starring a meatloaf patty packed with bacon, and topped with a dollop of mashed potatoes — just like Mom used to make!
